TURKEY
PANKO BREADING
1/2 cup
Panko (Japanese bread crumbs)

Egg
1 cup
Canola Oil
DIPPING SAUCE
1/4 cup
Peanut dressing, bottled
1/4 cup
Rice vinegar
VEGETABLES
1/4 cup
Sweet onion, sliced
1 cup
Zucchini, sliced
1/2 cup
Eggplant, sliced
1/3 cup
Broccoli, sliced
1/3 cup
Sweet potato, sliced
Directions
STEP 1
Bring 16 oz. oil to fry temperature over medium to high heat in a high-sided pan (small bubbles appear, but do not boil).
STEP 2
Follow Tempura mix directions according to package. Add Panko and eggs to tempura batter (batter should be fairly thick).
STEP 3
Dip each turkey piece and vegetable into batter. Coat well and place in heated oil to fry until golden on all sides. Place onto paper towel for 1 minute before serving.
STEP 4
Whisk peanut dressing with vinegar for dressing. Serve on side.
