Ingredients

TURKEY
PANCETTA AND SEASONINGS
1 oz.
Pancetta, sliced thinly
1/4 tbsp.
Garlic, chopped
1/2 tbsp.
Brown sugar
1/2 tbsp.
Olive oil
VEGETABLES
1/4 bulb
Fennel, sliced
1/4 each
Red onion, sliced
2 1/2 oz.
Field greens
DRESSING AND GARNISH
1/4 cup
Prepared vinaigrette dressing
1/2 oz.
Parmesan cheese, shaved
1/4 tsp.
Sea salt, coarse
1/4 tsp.
Black pepper
Directions
STEP 1
On sheet pan, mix together fennel, pancetta, red onion, garlic, brown sugar and oil. Roast at 400° F until the pancetta is crisp and fennel is caramelized, about 20 minutes. Remove and cool.
STEP 2
In large bowl, mix field greens, pancetta mixture and vinaigrette dressing. Toss together and top with turkey, Parmesan cheese, salt and pepper.
