Turkey Frittata

Turkey breast, bacon, tomato and scrambled eggs all baked together to make a warm frittata. Add crumbled blue cheese to the skillet mixture and then invert onto a platter and serve.

Foster Farms Turkey Signature Carving

TURKEY

1 1/2 oz.

Oil Browned Turkey Breast, diced (6705)

EGGS & BACON

1 slice
Bacon
1 3/4 each
Egg

PRODUCE, HERBS & CHEESE

1/4 each

Tomato, diced

1/8 cup

Blue cheese, crumbled

1/4 tbsp.

Thyme, dried

Directions

STEP 1
Pre-heat oven to 450°F. Fry 4 strips bacon in a large cast iron skillet over medium to high heat. Remove bacon and let cool, chop and set aside.
STEP 2
Sauté tomato and turkey in cast-iron skillet for 2 min. Scramble eggs with 1 tbsp. thyme and add to skillet. Sprinkle bacon and blue cheese over top of skillet mixture and cook 1 minute.
STEP 3
Place skillet in oven and bake until frittata is set, about 5 min. Invert skillet over platter to remove frittata.
