TURKEY
SOY GLAZE AND GINGER PEANUT DRESSING
1 oz.
Soy sauce
1 oz.
Honey
1/4 tbsp.
Red pepper flakes
1/2 tsp.
Sesame oil
2 tbsp.
Ginger dressing
1 tbsp.
Peanut butter
1/2 tsp.
Sea salt
1/4 tsp.
Pepper
PRODUCE & GARNISH
1/2 oz.
Carrots, julienned
1/4 cup
Green onion, chopped
1/8 each
Cucumber, julienned
1/4 tsp.
Black & white sesame seeds
NOODLES
4 oz.
Soba noodles
Directions
STEP 1
For soy glazed turkey strips, add turkey strips, soy sauce and honey in sauce pan and sauté until turkey is fully coated and sauce caramelizes. Let cool under refrigeration.
STEP 2
For ginger peanut dressing, whisk together ginger dressing, sesame oil, and peanut butter until smooth
STEP 3
Gently toss soba noodles with carrots, cucumber, red pepper flakes and green onion until thoroughly combined.
STEP 4
Evenly divide noodle mixture between two chilled square bowls.
STEP 5
Lay 2 oz. soy glazed turkey strips over each bowl and drizzle ¼ cup dressing over each.
STEP 6
Garnish with toasted sesame seeds and additional green onions if desired.
