TURKEY
VEGETABLES
1/4 tbsp.
Olive oil
1/4 each
Red, green and yellow bell pepper, sliced
2 tbsp.
Red onion, sliced
1 oz.
Canneloni beans
1/4 each
Cucumber, peeled, seeded and sliced
1 tbsp.
Italian parsley, chopped
ACCOMPANIMENT AND DRESSING
1/4 cup
Vinaigrette dressing
1 oz.
Pine nuts, toasted
1/4 tbsp.
Capers, drained
1/2 tsp.
Sea salt
1/4 tsp.
Black pepper
GARNISH
1/4 oz.
Parmesan cheese, shaved
Directions
STEP 1
Sauté turkey, peppers, onion, parsley, beans, pine nuts and capers in olive oil until warm. Season with salt and pepper.
STEP 2
Remove from heat and toss with vinaigrette and cucumbers.
STEP 3
Garnish with shaved Parmesan.
