This recipe makes four servings. Warm marinated and grilled turkey, piled high on a soft torta roll and topped with spicy cilantro relish and creamy sliced avocado for a delicious and bold sandwich.
Red onion, diced
Jalapeños roasted, seeded and diced
Romaine lettuce, shredded
Make marinade for sliced turkey by mixing together the oil, garlic, coriander, black pepper, and paprika. Toss turkey in marinade and heat a grill pan over medium-high heat. Grill the turkey until it is marked on both sides and warmed through, about 2 minutes.
To make the cilantro relish, combine the red onion, cilantro, jalapeno, lime juice, and shredded lettuce. Set aside.
Slice the torta rolls in half and toast them lightly. Assemble the sandwiches by piling 2 ounces of grilled turkey, topped with about a ½ cup of the cilantro relish, and ¼ of the sliced avocado. Close the roll and enjoy while warm!
