Romaine lettuce, shredded
1 cup
Kalamata olives, pitted

Red & green bell peppers, sliced & seeded

Extra virgin olive oil

Red wine vinegar
Directions
STEP 1
At least an hour before serving, toss pepper slices with 2 tablespoons of extra-virgin olive oil and the red wine vinegar to marinate.
STEP 2
Preheat oven to 350° F. Cut each pita round into 4 triangles and brush lightly with remaining extra virgin olive oil. Place pita triangles on foiled-lined sheet pan and bake until golden brown, about 5 minutes. Set aside and keep warm.
STEP 3
On same sheet pan, lay out slices of turkey, folded in half, and sprinkle with feta cheese. Return to oven and bake until the cheese is melted and the turkey is warmed through.
STEP 4
Make 4 plates with a portion of hummus, slices of turkey, olives and marinated peppers, lettuce and pita triangles to pile everything on. Enjoy!
