Pan-seared all natural turkey breast with sautéed eggplant, bell peppers, onions, mushrooms, black olives, garlic and herbs, sprinkled with Parmesan cheese. Heated and served on flatbread.
Sweet onion, chopped
Fresh thyme, chopped
Fresh basil, chopped
Black olives, chopped
Parmesan cheese, shaved
Pre-heat oven to 350° F.
On high heat, pan sear turkey slices until lightly browned on each side and place on an ovenproof platter.
In the same pan, add olive oil, onion and eggplant. Cook until tender, about 5 minutes.
Add bell peppers and cook additional 3 minutes.
Add mushrooms, thyme, basil, olives and garlic; cook 1 minute.
Spoon mixture over Turkey slices. Sprinkle cheese over vegetable/Turkey mixture.
Place platter in oven until cheese begins to melt, about 5 minutes. Let sit 1 minute and serve on one piece of flatbread.
