This recipe makes four servings. Diced Turkey breast, toasted peanuts, golden raisins, tart apples mixed in yellow curry mayonnaise on multigrain rolls. Served with greens drizzled with pomegranate juice, orange juice and olive oil.

Make dressing by whisking together pomegranate juice, orange juice and olive oil until emulsified. In small pan over low heat, toast the curry powder until fragrant.
Preheat an oven to 350° F and toast the rolls until lightly browned.
Whisk together mayonnaise, curry powder, pepper and lemon juice until combined. Fold in diced turkey, peanuts, apple, and raisins. Pile the turkey mixture on the rolls, toss the greens with just enough dressing to coat, and divide evenly across the sandwiches. Enjoy!
