Finding money in your restaurant trash

blog001-moneyintrashFood waste in America has gotten a lot of attention recently after studies find that Americans throw out about 414 pounds of food each year for every man, woman and child.

Restaurant waste, other studies find, contribute to about one-third of this amount — either during the prep process or food left on the plate.

When’s the last time you did a “plate study” to estimate how much food is coming back to your garbage disposal because portions are too large or side dishes go uneaten?  Conducting a plate study is the perfect job for your teen-aged nephew looking for a part-time job this weekend (FYI, he also needs a haircut).

Check out this excellent article from the good folks at POS Sector about how to do it.   You will likely find thousands of dollars being dumped into the trash can.  You’ll also help save the planet… and give your nephew a few bucks for that ducktail haircut he’s been wanting.
